Not all eggs are fried the same. What’s your favorite? Mine is over easy.
Over easy eggs are cooked on both sides, but the yolk remains runny. Make sunny side up eggs, then flip and cook 30 seconds with the yolk side down. On the plate, the top of over easy eggs appears white.

In a nutshell.
Over-easy: The egg is fried, then flipped, and cooked briefly on the yolk side.
Over-medium: The egg is fried, then flipped and cooked until the yolk is only slightly runny.
Over-hard: The egg is fried, then flipped and cooked until the yolk is cooked hard.
There’s subtlety when frying breakfast eggs.
Tips:
Only cook 1-2 eggs at a time to avoid over crowding the pan.Heat over low heat. Cooking too high will overcook or potentially burn the eggs without cooking the yolk enough.
Choose a non-stick pan for cooking so the eggs don’t stick. I like using a cast iron skillet or a ceramic coated pan for a healthy non-stick option.
